Palinka is a distilled fruit alcohol from the Carpathian Basin that was invented in the Middle Ages. Only Hungary and a small area of Austria make this spirit and call it Palinka. Similar products exist in Poland, the Czech Republic, Romania, and Slovakia but are named differently. Hungarian Palinka is regulated by local law LXXIII of 2008 which stipulates what can be called Palinka. Victor Orbon, the current PM of Hungary has established a law allowing citizens to produce up to 50 litters of Palinka a year for personal use. Palinka is produced using a still very similar to ones used in America to produce Moonshine. It is said that a small amount of Palinka should be taken to calm an upset stomach and this is a common practice with Hungarians. The first records of Palinka use dates back to 1332 during the reign of King Charles 1.
