Gluten is an important component of wheat and related grains, as it gives the chewy texture to bakery food by making dough elastic. Gluten is actually a set of naturally occurring proteins, which also nourish plant embryos during germination.

It is found in some oats. My aunt had celiac & has to check when she buys oatmeal, some do have gluten. ;-)

NOT just any cereal grain. Gluten is formed when the 2 proteins in wheat flour, glutenins and gliadins come together when mixed with water. Gluten is unique in wheat and to a very much lesser extent in rye. It is not found in other grains, not rice, not corn, not oats
