Amontillado is a variety of sherry wine characterized by being darker than fino but lighter than oloroso. It is named after the Montilla region of Spain, where the style originated in the eighteenth century.

In "The Cask of Amontillado," one of Edgar Allan Poe's best known short stories, first published in the November 1846 issue of Godey's Lady's Book, narrator Montresor describes how he took revenge on Fortunato during a carnival in Venice. Montresor lures Fortunato into family catacombs with the titular cask of amontillado, then proceeds to bury him alive. Fortunato’s body remains undiscovered for fifty years.
