Nachos are a favorite appetizer in many places in which Mexican food is popular, especially in Texas. They come in various varieties with many different toppings.

This Mexican delicacy originated quite by accident in the city of Piedras Negras, Coahuila, Mexico, just over the border from Eagle Pass, Texas. In 1943, wives of U.S. soldiers stationed in nearby Eagle Pass were in Piedras Negras and arrived at a restaurant after it had already closed for the day. The maître d'hôtel, Ignacio "Nacho" Anaya, created a new snack for them with corn tortillas and cheese. Anaya cut the tortillas into triangles, fried them, added shredded cheddar cheese, quickly heated them, added sliced pickled jalapeño peppers, and served them.

When Anaya was asked what they were he replied "Nacho's especiales". Nacho's "specials" became "special nachos". They come in many forms and diners can order plain or very fancy nachos with additions such as guacamole sauce, pico de gallo, salad toppings or various meats, including ground beef, chicken or pork. Some variations are a meal all on their own.
