The grain is only part of the plant. The grain is actually the seed of the grass it had to grow long enough to "go to seed". Once a grass has gone to seed it begins to die off to in order to feed the seed until it dries up drops its seed to replant and repeat the cycle. This is the reason one cuts grass because if you let it grow to seed it will die otherwise it will grow indefinitely.
