Saperavi is an acidic, teinturier-type grape variety native to the country of Georgia, where it is used to make many of the region's most well-known wines. It is also grown in Russia, in lesser quantities in Armenia, Moldova, Ukraine, Uzbekistan, Azerbaijan, Australia.

A teinturier grape is a red wine grape with dark skin and flesh. In contrast, regular red wine grapes have dark skins, but clear flesh. Fittingly, the word “teinturier” comes from the French “to dye or stain.”

Saperavi is a hardy variety, known for its ability to handle extremely cold weather and is popular for growing in high altitude and inland regions such as Kakheti, Georga. Being a teinturier grape it contains the red anthocyanin within the grape pulp as well as the skin and is unusual in being one of very few such grapes used in single-varietal winemaking.

Perhaps surprisingly, the vast majority of grapes used to make red wine do not have red flesh. The colour of the wine is derived from the skin of the grape.
