Neapolitan ice cream is a type of ice cream composed of three separate flavors viz., vanilla, chocolate and strawberry, arranged side by side. It is the first type of ice cream to combine three flavors. Chocolate ice cream is with natural or artificial chocolate flavoring. Strawberry ice cream flavor is made with fresh strawberries. Neapolitan ice cream sandwitches are prepared Neapolitan-style with strawberry ice cream. Vanilla is frequently used to flavor ice cream, the type of vanilla flavor is smoky or anise-flower like. The earliest frozen chocolate recipes were published in Naples, Italy in 1693. It was one of the first ice cream flavors, created before vanilla. Neapolitan ice cream was named in the late 19th as a reflection of its presumed origins in the cuisine of the Italian city Naples.

Neapolitan Immigrants bought their expertise with them to the United States. Spumone was introduced in the 1870s as Neapolitan-style ice cream. Among Spumon, cherry was changed to strawberry and pistachio to vanilla to reflect the most popular flavor preferences of Neapolitan ice cream. The first recorded recipe was created by head chef of the royal Prussian household Louis Ferdinand Jungius in 1839.
