From which country does Caravane cheese originate?
Caravane is the brand name for a camel's milk cheese produced in Mauritania by Tiviski, a company founded by Nancy Abeiderrhamane in 1987. The milk used to make the cheese is obtained from the local animals of a thousand nomadic herders.
The cheese has a soft, tender texture and a white, flowery rind. Its flavor is creamy, slightly salty and delicately sweet. It is often used in cakes, sauces, appetizers, savory meats, and various vegetable preparations, while its unusual flavor makes it an ideal accompaniment to a glass of red wine.
By using a special enzyme to achieve the correct consistency, the dairy produces a soft cheese with a white rind. Although it's very difficult to produce, its low lactose content has a digestive advantage when preparing various dishes that require less lactose.
It's exported to neighboring Senegal. Since Mauritanians do not eat much cheese, the European Union has not implemented regulatory policies for products from the dromedary camel. This has made it difficult to obtain cheese in Europe and America. However, with the help of Gary Guthrie, an American importer, the cheese is now available in select New York stores.
It's a very healthy cheese as it contains more nutrients, antibacterial enzymes, low fat content and vitamins than regular cow, buffalo, sheep or goat cheese. In fact, it has 3 times more nutrients than cow's milk.
