Kroppkaka (plural "kroppkakor") is a traditional Swedish boiled potato-dumplings, most commonly filled with onions and meat . Potatoes, wheat flour, onion, salt and minced meat/pork are common ingredients in kroppkaka.

It originated on the Baltic island of Öland. Since the 1700s, potatoes have been a staple food in Sweden. They discovered that alcohol could be distilled from them, therefore, they were widely cultivated.

The potatoes are boiled in water until they are fully cooked and soft. Then all the water is removed, they are ground until smooth and cooled completely.

The traditional stuffing is made from fried onions and some kind of pork. Ham, pancetta, or bacon can be used, or the meats can be combined so that the dumpling contains a little of each.

To make each bun, mashed potatoes are mixed with whole eggs or egg yolks and flour, and kneaded into a dough. A piece of dough is placed in the palm of the hand and spooned into the dough, after which it is sealed and rolled into a ball. After all the meatballs have been made, they are placed in boiling water and cooked until done.

They can be served with lingonberry jam, additional amounts of pork and onion, or a layer of bechamel sauce sprinkled with allspice.
