Nougatine is a French specialty consisting of almonds (and sometimes from other nuts, such as hazelnuts) and light syrup. It can be shaped while still warm. Just prepare a caramel, add the nuts and spread into an oiled baking paper.

If you want your nougatine in special shapes (strips, circles, figures, etc.) score these immediately, while the nougatine is still slightly soft.

It usually takes the form of small, irregular pieces that can be enjoyed on their own or as a topping for other desserts.
