Leapy Lee, flour used to be shipped in huge containers - and often became compacted in transit. In addition, it often had pebbles and other contaminants. Standards have changed. It's still nice to sift flour for some recipes - the flour is fluffier for adding to sponge cakes, etc.

Flour sifters and egg slicers have never changed over the years. And have been available since they were first produced.

Most people I know here in Oz still have a flour sifter, especially if they bake. I’m curious what people use instead, or do they just have lumpy flour?
