Spices are distinguished from herbs, which are the leaves, flowers, or stems of plants used for flavoring or as a garnish. Spices are sometimes used in medicine, religious rituals, cosmetics or perfume production.
India contributes 75% of global spice production. The Indian Institute of Spices Research in Kozhikode, Kerala, is devoted exclusively to conducting research for ten spice crops: black pepper, cardamom, cinnamon, clove, garcinia, ginger, nutmeg, paprika, turmeric, and vanilla.
