What does the 'shish' in a shish kebab refer to?
A shish kebab is a meal of skewered and grilled pieces of meat. The name of the dish comes from the Turkish word 'şiş', meaning sword or skewer, and 'kebap', meaning roasted meat dish.
Shish kebabs are commonly found in Mediterranean cuisine and are traditionally made with lamb. Nevertheless, there are many versions of shish kebabs, including other meats, poultry and fish. Sometimes, vegetables are placed between the pieces of meat, but in Turkey, the vegetables are normally served on a separate skewer.
In the United States, the word kebab usually refers to shish kebab. Outside of North America, it may also mean doner kebab, which comprises of sliced meat, often served as a sandwich.
