Kilishi is a version of jerky that originated from Hausaland in Northern Nigeria. It is a dried form of "suya" (or steak). Considered a delicacy, it is made from the flesh of cows, sheep or goats. The flesh is sliced into thin sheets of approximately a metre or less for easy drying. They are thereafter laid out on foils for the next process. A paste made from peanuts called "labu" is diluted with enough water, hot peppers and spices, salt and ground onions and sometimes sweeteners like honey. The already dried sheets of meat are immersed into the labu preparation for coating and thereafter left to dry in hot sun for hours before roasting on a grill. Kilishi, if well prepared, can be kept for months without change to its taste.
