What unusual ingredients has Tortilla del Sacromonte (Sacromonte omelette)?
The Sacromonte tortilla (also known as the sacro-monte tortilla ) is an omelette made with mutton (or calf) brains , criadillas and other types of offal.
The tortilla also usually has small pieces of nuts, peas and breadcrumbs . Some recipes include pieces of Trevélez ham , potatoes, and chorizo . This dish has been assigned to the gypsy community of Granada , specifically those who live in the Sacromonte neighborhood.
Bone marrow is also sometimes used as an ingredient. The brains and testicles are first sautéed with white wine and bay leaves before they are combined with other ingredients. The dish is usually found in Andalusia, but it is traditionally associated with Granada.
Like other types of Spanish tortillas, this version is also fried in the pan and is quite thick, with the crispy outer layer and a soft center.
