Italy is now considered one of the most diverse European countries by the number of vegetable species: half of Europe’s vegetable species are found in Italy. Every single Italian region hosts, on average, more vegetable species than the majority of other European countries. When experts are asked to find just one product to represent Italy… there is often only one answer: the humble olive. In Italy it's believed that there are at least 538 Italian olive cultivars. And it's known that there are around 250 million trees, many of which are centuries old: 450 thousand tons of oil is produced by the trees each year. There’s almost one olive tree for each Italian living in the country in Apulia alone.

Carolea olive trees grow in Basilicata and Calabria, a land between the heel and the toe of the “boot” in Southern Italy. The olives here product an excellent oil. Carolea Olive Oil has a medium intensity and fruitiness.
Frantoio olive cultivars provide the principal raw material for Italian olive oils from Tuscany. It is fruity, with a stronger aftertaste.
