Andy Andrews, Both omelet and omelette are correct. Omelet is the spelling used in American English. Omelette is the spelling used in British English. "Omlet" was the incorrect spelling. It is the same as your use of "spelt" instead of "spelled". Both are correct. They also included two correct spellings for mustache/moustache. They too, are both correct spellings of the same word. Mustache is the most common spelling in the United States. Moustache is used in other English-speaking countries. The differences arose when spelling standization of the language occurred simultaneously on both sides of the Atlantic.
