Pecans have always been my favorite nuts. I think part of the decline in Americans eating them is because we have been told by most nutritionists that they are too high in fat and we should eat almonds instead. I still have them in my morning oatmeal, put them in Brownies, cookies, cakes and salads. I also love a few pecans and a few raisins for a snack and I am not overweight.
We had several huge pecans trees in our yard at the home I grew up in. We would pick buckets full of them, sit and crack as many as we could eat and make all kinds of salads and desserts with the rest. Love pecans.
